Seoul: The second of six Apollo World Tour stops happened last Friday at House of Wild in the Itaewon-ro neighborhood of Seoul. Over the course of the evening, Frederik Bille Brahe prepared a home-cooked feast with Sumin Kim, sommelier, manager of Wildduck Canteen, and contributor of the iconic Korean BBQ Bulgogi & Pickled Vegetable Sandwich recipe published in Cookbook #9: Sandwiches. One of the dishes served was a tomato, pear, and hallabong orange salad, topped with sweet soy sauce and Sumin’s kimchi, which was, as Frederik put it, ‘a marriage between Apollo and Wildduck Canteen’. Frederik also sat down with Sumin, to discuss his new book Apollo: State-of-the-art cooking and a party. The conversation and book signing, introduced by Arum Jang, was Frederik’s way of bringing his philosophy of green gastronomy that defines Apollo to Seoul. It’s only right that the event for a cookbook that’s all about the beauty of really good produce and the power of presence took place in House of Wild with Sumin—someone with whom Frederik has that mythical, mind-reading connection that only the best friendships can bring.
