Portofino: In search of the super simple and super splendid, we’re following Andy Baraghani around Portofino as he explores some gems of Ligurian cooking. Normally based in New York City, Andy is a cook, food writer, and the author of The Cook You Want To Be: Everyday Recipes to Impress, and he contributed a beautiful essay on one of ‘life’s greatest pleasures: eating a big bowl of pasta’ for our new book, LIGURIA: Recipes & Wanderings Along the Italian Riviera, developed in partnership with Belmond as part of a brand-new series. ‘Over centuries, every region in Italy has developed its own [pasta] shapes featuring unique contours, ridges, diameters, and lengths—characteristics that lend themselves to specific sauce applications’, Andy explains, and here in these videos, you can see him mixing up some pesto with trofie pasta, shaking up a famous Portofino spritz, and roasting a Ligurian sea bass in a traditional outdoor oven.
