A book launch and a party

To kick off the release of our new cookbook, Apollo: State-of-the-art-cooking and a party by Frederik Bille Brahe, we threw a party straight from the source. Signed books, giant tiramisus, and plenty of dancing were involved. Our third book with Frederik, this one opens the doors to his Danish eatery, Apollo Bar, tucked inside the courtyard of the historic art institution Kunsthal Charlottenborg. From Pumpkin Fondue to Squid Ragout to Persimmon and Cara Cara Brûlée, even Tiramisú for 60 people, this is Frederik at his most expressive and collaborative, embodying Apollo Bar as a vibrant space for food and gathering. As meditative as it is rapturous, our new book distills the soul of the place into cinematic frames by Nikolaj Møller—who also captured the party alongside Niklas Adrian Vindelev—and over 100 recipes developed by Frederik and head chef Yuta Kurahashi, some of which were sprawled across the Apollo Bar for its big night. Edited by Jeni Porter, Apollo is your portal into a chic world of green gastronomy, where Danish cooking meets Japanese, French, and Italian notes, and where food, friends, music, art, design, and wine all meet, collide, clash, and coalesce.
