From the world of Apartamento, Enrique Olvera introduces this dynamic region tucked within Mexico’s lowlands, noting, ‘El Bajío has some surprise in store for everyone’, while food writer Alonso Ruvalcaba takes us through vineyards, an ecological farm, and on trips to harvest cactus and garambullo berries, as well as discovering how vibrant tortillas are stamped and cooked over open flames. Nadine Ijewere is a British photographer known for her richly coloured, intimate portraiture. Working across fashion and editorial contexts, she became the first Black woman to shoot a cover for Vogue in 2018. Her work centres community, identity, and representation, celebrating diverse forms of beauty through a carefully composed visual language.

Introduction by Nuno Mendes.
Nuno Mendes is a Portuguese chef known for his contemporary approach to Portuguese cuisine. In 2010 he founded Viajante in London and later took over Chiltern Firehouse. In 2018, he opened Mãos at Blue Mountain School, which earned a Michelin star, and in 2022 he opened Lisboeta in Fitzrovia, a love letter to his home city, Lisbon.
